Do you ever get a hankering?

You know sometimes you just get a taste, or hankering, for something, even though you already have dinner planned? Well, last night was one of those nights. I had a hankering for a good pizza. And even though we had been smoking ribs all day, ribs AND pizza for some reason sounded better.

So, we picked up a New York style pizza from our local Papa Murphy’s (the owners, Mark & Rosalyn Finnegan are the very best). The crust, sauce, and toppings are always tasty from Papa Murphy’s and their “favorite” deals area always spectacular. So, for $7, we had dinner that we could add a baby greens salad with balsamic and olive oil too for balance. This may sound like a promotional pitch, but honestly, I received nothing for writing this post, other than the satisfaction of knowing that dinner would be fantastic!

But, you know me, I always have a tweak or modification to a good meal that makes it even better. While this isn’t pizza as my grandparents made it, my American adaptation, made with Italian ingredients and inspiration definitely elevates Papa Murphy pizza to a new level. While the oven was heating up to the recommended 425 degrees, I grated a bit of Parmigiano-Reggiano cheese on top of the pizza and added some thinly sliced onions just for good measure. Oh and a few basil leaves too. One note, the onions add a good deal of moisture to the pizza that may affect your cooking time.

Once the over was to temp, we slid the pizza and tray into the oven and set a timer for 10 minutes. When the timer went off, I carefully removed the paper cooking tray that comes from Papa Murphy’s, so the pizza bottom would crisp up for that nice soft crunch. Set another timer for 8 minutes. Boom!

Ah, when the pizza finally emerged from the oven, the scent was divine. After letting it cool for about 5 minutes we cut into it and enjoyed a very deeply flavored pizza along with a delicious healthy salad. We were full and very satisfied with the rest of the evening.

So, the next time you get one of those hankerings for something “else” follow your feelings and enjoy it while still keeping an eye on your healthy lifestyle. You really can have it all (in moderation of course).
